Organic Vegan Pumpkin Pie Ice Cream

Even if Summer is over, 

it’s not over for ice cream!

Especially organic, vegan ice cream!  This is dairy, soy, and gluten free AND is also 50% raw!

Blend the following:

  • 3 cups coconut creamer
  • 1 can organic pumpkin
  • 2/3 cup raw cashew butter
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp all spice
  • 3/4 tsp salt
  • squeeze of lemon juice

Taste the mixture and make sure it is to your liking!  Some like their pumpkin pie more spicy, so adjust accordingly at this stage.  Ice cream mixture will mellow out after you run it through the ice cream maker, so make sure the flavor at this stage is slightly more concentrated.

Refrigerate the mixture or freeze for half hour.

Run through your ice cream maker!

Voila!

INDULGENT TIP:  Add ready made pie crust in large crumbles at the half way mark when in the ice cream maker.
